MURUNGAI KEERAI SAMBAR
Preparation time 20 mins | Cooking time 20 mins | Serves 3-4
Ingredients
- Drumstick leaves - about 4 cups
- Toor dal - 1/2 cup
- Garlic - 8, pods
- Turmeric powder - 1/4 tsp
- Asafoetida - 1/4 tsp
- Green chilli - 2
- Onion - 1 large
- Tomatoes - 2
- Sambar powder - 3 tsp
- Red chilli powder - as needed
- Tamarind - lemon sized
- Water - 1.5 - 2 cups
- Ghee - 2 tsp
- Salt - to taste
- Oil - 3 tbsp
- Mustard seeds - 1 tsp
- Cumin seeds - 1 tsp
- Urad dal - 1/2 tsp
- Curry leaves - 1 sprig
- Vadavam - 1 tsp

Method
1. Wash and soak the toor dal for 30 minutes in a 2 or 3L pressure cooker.
2. Add the garlic, turmeric powder, asafoetida, green chillies and salt to the toor dal.
3. Add 1.5 cups of water and pressure cook the dal for 3 whistles.
4. In the meantime, soak a lemon sized tamarind in 1/2 cup of water.
5. Once the pressure settles, open the cooker and mash the dal.
6. In a kadai, heat oil. When the oil heats up, add the mustard seeds, cumin seeds, urad dal, asafoetida, curry leaves and vadavam. Fry for a few minutes.
7. Add the chopped onions and saute till it browns.
8. Add the tomatoes and cook for 4 minutes. Add required salt.
9. Add the sambar powder and red chilli powder and mix well.
10. Wash the drumstick leaves and add it in. Mix well and cook for 5 minutes.
12. Add the tamarind water and cook for another 3 minutes.
13. Add 2 tsp ghee and switch off.
Notes
1. Remove the larger stems from the drumstick leaves.
2. Add more green chilles or red chilli powder as per your taste.
