Lemon rice is a simple rice variety that we make a lot in South India. My children prefer this kind of variety rice for their lunch boxes. One such day I decided to add some cooked peas along with it, just to include some veggies to their lunch box. You can also add some carrots instead of the peas.
LEMON PEAS RICE
Preparation time 10 mins | Cooking time 10 mins | Serves 2
Ingredients
2. In a kadai, heat the oil. Add the mustard seeds, urad dal, curry leaves and red chilli.
3. When the mustard seeds splutter, add the cashews and roast for a few seconds.
4. Add the cooked peas and turmeric powder. Mix well.
5. Add the lemon juice and little salt and mix again.
6. Add the cooked rice and mix well. Switch off.
Notes
1. You can use left over rice too.
2. You can increase or decrease the lemon juice depending on personal preference.
3. Add more chillies if you want it spicier.

- Lemon juice - 1/2 tbsp
- Turmeric powder - 3/4 tsp
- Fresh peas - 1/2 cup
- Cashews - few
- Salt - to taste
- Oil - 1 tbsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/4 tsp
- Curry leaves - few
- Red chilli - 2

Method
1. Pressure cook the peas for 2 whistles and set aside. Cook the rice and spread it in a plate to cool down.3. When the mustard seeds splutter, add the cashews and roast for a few seconds.
4. Add the cooked peas and turmeric powder. Mix well.
5. Add the lemon juice and little salt and mix again.
6. Add the cooked rice and mix well. Switch off.
