Whenever we visit my my mum she always makes this poriyal for my kids and they enjoy eating this so I also started making this poriyal at home. It's easy and simple to make and carrot is a vegetable that is loved by all kids so this always works well!!
CARROT EGG PORIYAL
Preparation time 15 mins | Cooking time 15 mins | Serves 2
Ingredients
Methods
1. Wash and peel the carrots. Grate or finely chop them.
2. In a kadai, heat the oil and add the mustard seeds, urad dal, cumin seeds, curry leaves and green chilli.
3. When the mustard seeds splutter add the carrots and salt, mix well and cook. Sprinkle some water and cook the carrots.
4. When the carrots are half cooked, add the turmeric powder, coriander powder and turmeric powder. Mix well and continue to cook.
5. Push the carrots to one side and break open the eggs and scramble in high flame. Mix with the carrots.
6. Cook for 2 more minutes, check for salt. Add the lemon juice and add some chopped coriander leaves and switch off.
Notes
1. You can use grated carrots as well.
2. My mum adds chopped onions, I don't add.
3. You can scramble the eggs separately and add it to the carrots.
4. Add more green chillies if your kids will like a spicy poriyal.
5. My mom always adds some lemon juice, I did not add.
6. Use a non stick pan, if you don't want the eggs to stick while scrambling.

- Eggs - 2
- Turmeric powder - 1/4 tsp
- Coriander powder - 1/2 tsp
- Pepper powder - 1/2 tsp
- Lemon juice - 1/2 tsp (optional)
- Coriander leaves - few chopped
- Salt - to taste
- Oil - 2 tbsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/4 tsp
- Cumin seeds - 1/2 tsp
- Curry leaves - 1 sprig
- Green chilli - 1, slit
